Summary:碩士 === 明新科技大學 === 化學工程與材料科技系碩士在職專班 === 107 === Abstract The purpose of this thesis is to apply the extracted from Echinacea as the raw material regarding the changes of: (1) Time (2) Temperature (3) Extracted ethanol concentration (4) Solid-liquid Ratio to investigate in total phenols and flavonoids, by using the response surface methodology (RSM) to obtain the optimal extraction conditions. Furthermore, the total phenol and flavonoids extracts from the optimal extraction conditions are to examine their antioxidant characteristics. The results indicated as listed below: The extracted optimal conditions of Echinacea in total phenolics were 38% ethanol, liquid-solid ratio 100% at 60 ℃ for 3 hours. The extraction yield in total phenolics was 36.9446mg/g. Echinacea in flavonoids was optimally extracted by 40% ethanol, liquid-solid ratio 100% at 60℃ for 5 hours. The extraction yield in flavonoids was 34.0579mg/g. The results of antioxidant characteristics in total phenolics and flavonoids of Echinacea from optimal extracted conditions showed the reducing ability by 1.30 and 0.72, a scavenging DPPH radical ability by 70.58% and 61.54%, respectively.
