The research brings out Tainan’s unique food history of Lu Noodle by emphasizing on recording its evolution, background and local people’s wedding gourmet habits. Nowadays, tourism has greatly changed the trend of local unique snacks in Tainan. Thus, the research further investigates whether tourism has an influence on the passage and evolution of local eating diet habits. The research applies the literature review, participant observation, and uses snowball sampling to study the research participants, composed of sixteen local Tainanese. The in-depth interviews were conducted via selective sampling, including the vendors mastering the technique of making Lu Noodle, experts of Lu Noodle, and local inhabitants from various background. The findings indicate that Tainan’s local custom and eating diet were significantly influenced by Han Chinese migration. Lu Noodle, braised noodles in Tainan and a delicate symbol of the wedding gourmet, not only is abundant in sophisticated and plentiful ingredients but requires the time- and effort-demanding cuisine. On one hand, the cook mastering of Lu Noodle is well-treated and highly respected among his family. On the other hand, Lu Noodle in Tainan, a popular dish, can be seen on the table of the local gentry’s family banquets and the snack of local people. Furthermore, the passage and cultural inheritance has strongly influenced its flavor and custom. Lu Noodle, as the essential dish of the precious wedding banquets in the early agriculture society, was so unique that people used to have it only on special occasions. Due to the abundant delicacy of Lu Noodle, and the sweetness and consideration of the hosts, Lu Noodle plays a unique role in the Tainan snack culture and every- day cuisines. Thus, it represents a symbolic memory of Tainanes diet habit and its own culinary culture.
