Summary: | 碩士 === 國立高雄餐旅大學 === 飲食文化暨餐飲創新研究所 === 105 === With the growing trend of international tourism, the importance of developing professional English abilities cannot be overemphasized. In particular, culinary arts majors’ English proficiency is comparatively lower than their hospitality-majored peers, and thus, designing English lessons that can integrate their interest in culinary arts and English learning is a must. On the basis of action research and project-based learning, this study designed English lessons based on food culture and developed course materials related to the theme of pineapples, including the origin, cultural backgrounds, and recipes. The final product of the food project was a short film, consisting of instructions of making three pineapple dishes along with simple introduction to these dishes. Before and after the food-project English lessons, eight of the participating students were interviewed for views of learning food culture and English. The findings showed that the project-based English lessons were regarded as useful in terms of learning pineapple-related food culture and culinary English and raising learning motivation for culinary English, but the effects on motivating students to learn food culture were rather limited. Finally, this thesis offered pedagogical suggestions about integrating food projects and English lessons to raise students’ motivation and efficiency for learning food culture and professional English for culinary arts.
