Summary:碩士 === 東海大學 === 餐旅管理學系 === 101 === During the peak time, such as holidays, if restaurant could accommodate more customers, table turnover rate could be increased. Certainly, accommodating more walk-in guests is relying on not only the effort from all staff. However, host/hostess plays an key role to improve seat occupancy. This research applies eM-Plant 7.0, a computer simulation software, to build up a computer simulation model, simulate the real operation of a restaurant, and fine a proper slack time ( i.e., customer reservation time minus arrival time of walk-in customer ) for each circumstance to host more walk-in customers. According to our findings, the present policy, 90-minute slack time, could not result in the highest seat occupancy for each circumstance.
