Therefore, the purpose of this study is to develop and construct the measurement items of eating competence (EC), and also to modify the EC questionnaire for the elderly in Taiwan to measure their concept on nutrition. Currently few study in Taiwan adopted this instrument, thus, the questionnaire must be developed by back translation, content validation and pretest by expert before finalized. The data were collected from those who are over 65 years old by in-depth interviews. Totally 73 effective questionnaires were obtained. The researcher conducted statistical analysis with SPSS 18.0, including descriptive statistics, independent sample T-test, one way ANOVA, Pearson correlation, reliability analysis and factor analysis. The results show that:(1)The whole reliability of EC is acceptable (alpha = 0.774), and those of Eating Attitude, Food Acceptance, Internal Regulation, and Contextual Skills were 0.666, 0.659, 0.504, and 0.555, respectively.(2)Difference Analysis indecated that male elder people and those who are accompanied with mate or family members are more positive in eating competence. Besides, level of education and age do not exert an impact on eating competence, because nowadays most elderly people have a positive attitude toward diet and nutrition issues.(3)Correlation analysis showed some relations between EC and Dietary Quality Score.
