A quasi-experimental design was used. Two classes of fifth-grade students(amounts to 67 people) from an elementary school in Kaohsiung County were randomly assigned to either the experimental or the control groups. Experiment teaching lasts four weeks. Self-regulated learning was implemented in nutrition class of the experimental group, while the control group was taught in the traditional way. Before the experiment, both groups took a test of a scale of nutrition attitudes and a scale of dietary behavior. After experimental instruction for four weeks, both groups took a test of a scale of nutrition attitudes, a scale of dietary behavior, and a test of nutrition achievement in the hope of finding out about their learning effect. Four weeks later, both groups took a test of a scale of nutrition attitudes, a scale of dietary behavior, and a test of nutrition achievement again in the hope of finding out about their learning retention.The instruments include a scale of nutrition attitudes, a scale of dietary behavior, and a test of nutrition achievement. A scale of nutrition attitudes, a scale of dietary behavior are made by Ho Ying Chung. The answers of questionnaires were measured by the five- point Likert scale. A test of nutrition achievement by self-edited includes the true or false, choose in question type. The content of teaching materials are edited by four capability Indexes in “Nine-year Coherent Curriculum Education System in Health and Physical Domain”. The four capability Indexes are “understand different food can offer the balanced diet to make up”, “understand the requirement of nutrition is determined by the age, sex and activity”, “the information of using the food and nutrition labels, choose to accord with nutrition, safe, economic food” and “the experience of sharing and discussing the movement and diet, form a personal healthy behavior”. All results were analyzed by independent sample t-test, paired-sample t-test, one–way analysis of covariance and one–way analysis of repeated covariance. The primary findings of the study were showed as following: 1. No significant difference was found between experimental group and control group on a test of nutrition achievement. 2. No significant difference was found between experimental group and control group on a test of nutrition achievement in their learning retention. 3. The experimental group scored higher on a scale of nutrition attitudes than the control group. 4. The experimental group scored higher on a scale of nutrition attitudes than the control group in their learning retention. 5. The experimental group scored higher on a scale of dietary behavior than the control group. 6.
