Subjects who had serum albumin level lower than 3.5 g/dL or serum total cholesterol level lower than 160 mg/dL were included in this study. The subjects whom agreed to receive the dietary consultation for six months were included into the intervention group (n=12), while the non-intervention group (n=10) did not have any dietary consultation. Nutrient intakes were investigated by interview method, and the anthropometrical,hematological and biochemical parameters were also measured. The correlations between the changes of nutrient intakes, anthropometrical, hematological and biochemical parameters during the experiment were analyzed. The results showed the anthropometrical, hematological, biochemical and nutrient intakes were not significantly different between the two groups before the experiment. The total calorie, lipid and carbohydrate intakes were significantly increased in the intervention group at the 6th month. The body weight, body mass index (BMI), mid-upper arm circumference (MAC), waist and hip circumferences,erythrocyte, hemoglobin, hematocrit, mean corpuscular hemoglobin (MCH), mean corpuscular hemoglobin concentration (MCH) and albumin values of the intervention group were also increased. Total cholesterol value was significantly increased in the fourth month. In the non-intervention group, the nutrient intakes, anthropometrical, hematological and biochemical parameters were no significant changes during the experiment. Correlation analysis found the increases of energy, fat and carbohydrate intakes were positively related to the changes of mid-upper arm circumference (MAC), and the increase of fat intake was positively related to the increase of red blood cells, hemoglobin, hematocrit, body weight, BMI in intervention group. The decrease of energy intake was positively related to the decrease of triceps skinfold (TSF), mean corpuscular hemoglobin concentration (MCHC) and the protein intake increasing was positively related in non-intervention group. In summary, we conclude that the dietary intervention could improve the malnutrition of disabled homebound people, and the maintenances of nutrients intakes may be the important factors for their nutritional status.
