Summary:碩士 === 東海大學 === 食品科學系 === 85 === ABSTRACT Two major acylated anthocyanins of eggplant(Solanum melongena) were isolated and was identified to be〝Nasunin〞 delphinidin-3-(p-coumaroyl-L-rhamnosyl-D- glucoside)-5-glucoside and the other anthocyanin is the isomer of nasunin with cis form coumaroyl. We also found that there is perhaps a isomerase to interconvert them and worth more investigating in the future. The purified anthocyanidins and anthocyanins were used to study their separation in capillary zone electrophoresis(CZE) and micellar electrokinetic capillary chromatography(MEKC)including buffer system ,voltage and addition of organic modifier. The results indicated that separation can be attained by addition of organic modifier(methanol) and surftants(sodium dodecyl sulfate; SDS) can improve their resolution.Capillary electrophoresis showed good resolution、short separation time and small amounts of sample needed.CZE and MEKC will be a new technique to characterize anthocyanidins and anthocyanins.
