In order to achieve the study goal, two of the three eggs groups were storedaccording to the classical storing conditions (short term=+10÷+11oC and 75% airmoisture, respectively long term =+4oC and 90% air moisture), while the thirdgroup was stocked within the conditions existing to various traders (+20÷+25oC and45% air moisture).The storage period counted 21 days and the quality assessmentswere done at the beginning of the period and then, at each 7 days.The comparativeanalysis of the studied physical quality factors, assessed at the beginning and at theend of the storage period, shown minor quality alterations (1.17-22.08%) in thegroups stored “refrigerated”, while major alterations were observed (4.57-48.49%)in the eggs stored in conditions simulating traders supply parameters.Moreover,maintaining the eggs at low temperature inhibits germ multiplications to only 5.88%from initial contamination, as compared to +46.45% germs payload on the shell,after the eggs storage at high environmental temperatures.http://spasb.ro/index.php/spasb/article/view/1545eggsqualitystorage
