Drying kinetics of grated unfermented cassava mash was investigated experimentally at air temperatures of 40 C, 55°C, 70°C, 85°C and 100°C using a model laboratory dryer. Model validation was carried out using root mean square difference between the experimental values and the simulated values and the result was 0.59% which was within the acceptable limit of 10 %.
