The researches presented in this paper aimed to determine the changes (every 30 days) in the content of some biochemical indices of apples (titratable acids, sugars, ascorbic acid (vit.C) and dry substances) during storage, depending on the applied thermal regime. After harvesting, the apples of late varieties Florina, Cempion, King Jonagold and Pinova were stored for 150 days at 1, 2 and 30C and relative humidity of 85-90 %. On removal from storage, it was established that the fruits have consumed different amounts of plastic substances depending on the applied thermal regime and this was largely reflected on the quantity of standard fruits and their organoleptic characteristics.
