Lactic acid bacteria from Jijel’s traditional butter: Isolation, identification and major technological traits
Twenty seven (27) lactic acid bacteria were isolated from Jijel’s traditional butter. These strains belong to three genera: Lactococcus, Lactobacillus and Leuconostoc.
