Peanut is an important crop in Taiwan. Aspergillus flavus or A. parasiticus contamination of peanuts results in the production of highly toxic metabolites, such as aflatoxin B1, B2, G1 and G2, is the well known the carcinogens, the aflatoxin B1 can even cause death. In this study, we evaluated the effecters of post-harvest treatments on aflatoxin production in peanut storage, then established the good hygiene practices of peanut to prevent the pollution of aflatoxin. Our results indicate that under controlled the conditions of storage temperature (<20℃) and relative humidity (<50%), and control the moisture content of the raw material less than 10%, the growth of seed-borne fungi and aflatoxin-producing were effective reducing.
