In addition to the consumption habits of households or individuals, and the sale of food, there is also a lot of food loss from food production to processing and packaging. The purpose of this research aims was to explore the causes of food waste in food manufacturering industry. According to the literature review, it is mentioned that improper raw material management in the food manufacturing industry, improper pre-treatment of raw materials, human errors and improper storage temperature of products are common factors that cause food waste. First, in-depth interviews with the three food manufacturing companies to discuss the key factors and prevention of food waste, and initially confirm the research structure and assumptions based on the interview results. Then, this study designed the research questionnaire to examine the hypotheis and used the data collected from 67 chilled food or frozen food manufacturing companies in Taiwan. The data analysis methods include descriptive statistics analysis, factor analysis, reliability analysis, Pearson correlation analysis, one-way analysis of variance and regression analysis by using SPSS sofeware. According to the results of the regression analysis, the “Raw material inventory management” and “Improper raw material inventory management”;“ Pre-process management of raw materials” and “Inappropriate handling of raw materials”; “Transport and storage management” and “ Improper storage and transportation management” are relevant. Among them, “Inappropriate handling of raw materials”, "human error" and "company size" has been verified as a key factor affecting food waste.This study hopes to promote government and industry concerns about food waste and provide food manufacturing as a reference for food waste prevention management.
