Summary:碩士 === 國立臺灣海洋大學 === 食品科學系 === 107 === Investigating the demands of the elderlies’ dietary nutrition and offer appropriate food intake to slow down the ebbing of their body as well as to maintain their health is the most crucial issue in current days. This study aimed to analyses the current demands of the elderlies’ dietary nutrition according to the Health and Welfare Department data. On the other hand, we also developed a new type dietary supplement for them. This study was conducted by survey method and laboratory study to develop the new product. The new dietary supplement was formulated from by-product of Taiwanese fish processing which called as “Fermented Tilapia”, then mixed with “Monostroma nitidum Oligosaccharide Extract” and various grains and vegetables. The results showed that 94.3% of respondents needed the nutrition intake in their main dietary supplements and possessed health effects which can enhancing their immunity. In addition, 68.6% of respondents liked to our new type dietary supplement. This new dietary supplement is convinced to provide a reference for the development of the future product as ordinary foods to take every day and especially for fulfill the elderlies’ dietary nutritional.
