Nowadays, the tourism has grown as a result of increasing dining-out population and people’s emphasis on living quality. It also raises requirement for professional manpower of restaurant industry and highlights the importance of vocational education to cultivate restaurant talent. The aim of the study is to explore the vocational school students’ personality traits and learning attitudes toward the practical training in the workplace. This research sent out 450 questionnaires altogether and had retrieved 420 to the vocational school students from cooperative education in Kaohsiung. Fifteen invalid questionnaires and the effective rate of recovery is 90%. The instruments implemented in this study include descriptive statistics, item analysis, reliability analysis, factor analysis, independent-Sample t-test, one-way ANOVA, Scheffe's posterior comparisons analysis, and multiple regression analysis. After the statistical analyses, there were three major findings to be summarized as follows: (1) There are significant differences in the students’ individual variables of personality traits and effects of practical training in the cooperative education; (2) There is a significant difference in the effects of the students’ personality traits on their practical training in the cooperative education; (3) There is a significant difference in the effects of the students’ learning attitudes on their practical training in the cooperative education. Based on the study findings, in order to improve the students’ performance in the workplace, the researcher suggested that (1) the school help develop the students’ agreeableness and open-mindedness; (2) the cooperative firms select agreeable and open-minded students; (3) the students establish a good relationship with classmates and colleagues in cooperative education.
