Bacteriocins produced by yeasts in pickles that can inhibit the growth of other bacteria. Enterocin SE-K4 is from Enterococcus faecalis K-4, which is known to have heat tolerance and inhibition of Enterococcus faecium, Enterococcus faecalis, Bacillus subtilis, Clostridium beijerinckii, and Listeria monocytogenes. We transferred Enterocin SE-K4 gene to Arabidopsis thaliana by Agrobacterium-mediated transformation . Genomic PCR has been used to prove seven transgenic plants were identified. Real time -qPCR was used to confirm that Enterocin SE-K4 expressed in Arabidopsis thaliana. Overexpression of Enterocin SE-K4 increase chilling tolerance of Arabidopsis thaliana and crude extracts of Enterocin SE-K4 transgenic plants inhibit Listeria monocytogenes.
