Cellulase were used to hydrolyze the polysaccharide and the results showed that most Eucheuma cottonii polysaccharide after enzymatic hydrolysis system were hydrolyzed to smaller molecular oligosaccharide. The results from Response surface methodology showed that the maximum responses as following:polysaccharide concentration was 18.17 mg/mL, polyphenol was 8.57 ug/mL, DPPH radical scavenging activity was 20.85%, absorbance of reducing power was 0.086, ferrous ion chelating ability was 90.38%. After enzymatic hydrolysis system, polyphenol was upgrade to 11.98 ug/mL, DPPH radical scavenging activity was upgrade to 38.12%, absorbance of reducing power was upgrade to 0.1265, ferrous ion chelating ability was upgrade to 92.42%. Comparing the differences in the antioxidant activity with different procedures, we found that enzymatic hydrolysis helps to increase the antioxidant activity of Eucheuma cottonii. That means it has great potential to develop cosmetic raw materials for antioxidant function.
