In the early age before European people discovered the new continent, the aboriginal of Central America had been planted cultivars. Furthermore, the early American Colonies used pumpkin as their main foods. Nowadays, Taiwan has planted more than ten pumpkin cultivars, each of them have different functional ingredients. Therefore, the purpose of this research is to investigate 19 pumpkin cultivars antioxidant activities, total phenolic compound and total carotenoid as basically data for further experiments. The results showed that 「阿成」、鮑魚and 「壯士」cultivars had the highest total carotenoid 1051.3, 834.8 and 863.5 mg/gDW, respectively. 「阿珍」cultivar is the only cultivar is colorless flesh but it had the highest DPPH scavenging activities, FRAP ability, and total phenolic compound. 「阿呆」and「阿嬌」cultivars only had highest FRAP ability. Based on this research, the investigation will be more focused on the highest DPPH scavenging activities, FRAP ability, total phenolic compound,and carotenoid content in order to improve human health.
