Therefore, it is very important to determine the qualitative and quantitative phosphates before eating. The current method for the determination of phosphate in foods is very common with High Performance Ion Chromatograph (HPIC) analysis methods. This method can quantify phosphate, pyrophosphate, and tripolyphosphate contents, and analyzes the market. The content of phosphates in foods, but the disadvantages of HPIC are expensive equipment, strict operation, so in this paper, the use of spectrometers for qualitative and quantitative analysis of phosphate, analysis of the current food safety and health management law in Taiwan approved the use of food additives - Phosphate. By different kinds of substances on the different wavelengths of light intensity intensity differences, measuring different concentrations of phosphate and sample data regression analysis and statistical verification, to discuss the feasibility of spectrometer to detect phosphate.
