This strict and complicated tea-making process makes Dong-Ding Oolong Tea with such charming fragrance and flavor. Through an experienced farmer’s determination, he knows the prime time for tea harvesting; then via a senior tea-making master's experience, he provides a suitable tea-making process for fresh leaves; and then with a professional tea leaves rolling skill by an experienced roasted master, he can achieve its' special shape to be loose ball shape or tight ball shape;because of all above traditional tea-making crafts, Dong-Ding Oolong Tea achieves this unique fragrance and flavor.
Viewing Tea Industry development at Lugu village in Nantou County of Taiwan,we found the decreasing tea planting area influenced tea yield;and tea yield became less and less, tea making factory reduced the demand of tea-making masters;when the tea-making masters demand reduced and in addition, customers changed their tea flavor, all these forced tea-making masters to change their traditional tea process and technical heritage to get chasm in different age. More worrisome is how to keep the traditional and complicated tea-making skill and last to the next generation.The maturity and completeness of tea-making skill affect to tea quality, especially for
partially fermented tea.
This research case is focused on a tea producing company located at Fonghuang,Lugu Village.Through several interviews on their Dong-Ding Oolong Tea producing
skill knowledge,the writer recorded their cogitation and process, and lead them to apply Traditional technical heritage.
To figure out application process and apply by their Ball-rolling process of Dong-Ding Oolong Tea, and after all, I provide some advice regarding how to preserve and last this traditional tea process well.
