Purposive sampling was used with self-designed questionnaire for a total of 377 samples. The descriptive statistics, one-way ANOVA and Pearson correlation were used to analyze collected data. As for the food safety knowledge, study results indicated that hospital catering staff obtained the highest score on environmental pollution related questions, followed by pesticides, food safety, and food additives related questions. As for the knowledge management, the highest score was applied to knowledge application. This study also found that there were no significant differences in gender and job title on food safety knowledge. In addition, study results found that participants who are 20 to 40 years old, living in the north, who are administrators and nutritionists, earn monthly income between NT$60,001 and NT$80,000, with college degree, have one to three years work experiences, have Class B Chinese food license and conduct regular health check seem have better food safety knowledge. Better performance in knowledge management included male, between 20 to 40 years old, living in eastern part of Taiwan, who are nutritionists and assistants, monthly income between $60,001and $80,000, master’s degree, and have Class C Chinese food license. Moreover, study results revealed that female whose age between, 20 to 40 years old, living in the northern part of Taiwanwho work as nutritionists with monthly income between NT60,001 and NT80,000 , with one two three years work experiences, and have Chinese food grade C licenses tend to obtain better performance at workplaces. There is no significant relationship between food safety and knowledge management of hospital catering staff was found, but a positive relationship between food safety knowledge and job performance was found.
