The progress of metabolic syndrome and colorectal cancer are recognized as an intimate relationship with low dietary fiber diet. Whole grains are major sources of dietary fiber. However, most of the Taiwanese people prefer refined rice with low dietary fiber to brown rice due to the unacceptable taste of brown rice. Aim of this study is to develop a type of rice, konjac rice, exhibited similar tastes compared with refined rice and investigate purchase intentions by questionnaire survey. These results indicated that 58% of the volunteers comprehended the benefit of dietary fiber, 37% of the volunteers consider dietary fiber is benefit for health and 34% of the volunteers know dietary fiber is abound in konjac. Refined rice and Konjac in a ratio of 1:0.5 was recognized as favorite konjac rice by 39% of the volunteers due to similar taste compared with refined rice. In terms of purchase intention, 88% of the volunteers may purchase the meal box of konjac rice, and 73% of them are motivated by the higher content. The ideal price for the meal box of konjac rice is 35 to 40 NT dollars. However, 67% of the volunteers may change their purchase intention while they have needs of health-preserving and weight management indeed. The results of this study indicated that volunteers exhibited high purchase intention for the meal box of konjac rice. We speculated that konjac rice may be potential for the market of health-preserving products.
