To deal with the global warning and the abnormal climate changes, the study of extreme weather has become a trend in the future. Environmental consciousness rises recently while food behavior influences global warning. Thus, to achieve the sustainable development of ecological environment is only through low-carbon diet education which can change the low-carbon attitude and the low-carbon behavior of students. The purpose of the study was to investigate low-carbon diet knowledge, attitude and behavior of the students at an Elementary School in New Taipei City. The study mainly discussed the differences on the low-carbon diet knowledge, low-carbon attitude and low-carbon behavior from different background variables of the students. Meanwhile, this study discussed the connection among the low-carbon diet knowledge, attitude and behavior. Furthermore, the low-carbon diet knowledge and the low-carbon attitude can predict the low-carbon behavior. Finally, recommendations are made that may help to promote low-carbon diet education in elementary schools. The research had been aimed at the fourth, fifth, and sixth graders in New Taipei City, and the research had conducted the questionnaires to do the survey. In this questionnaire study, the use of the “low-carbon diet knowledge scale”, “low-carbon diet attitude scale” and “low-carbon diet behavior scale” as research tools. The data had been analyzed by the statistical methods included descriptive statistics, t-test, one-way analysis of variance, Pearson product-moment correlation, and multiple stepwise regression.
