Crude polyphenols (CP) and purified polyphenols (PP) expressed high ability to scavenge DPPH free radicals. Pectinesterase inhibitor (PEI), CP, and PP reached equilibrium concentrations at 89.4, 78.3 and 46.8%, respectively; the inhibition rates were higher than 75% and DPPH free radical scavenging ability was slightly lower than Vit C. However, the reducing power of PP (k = 0.97 ± 0.01) was higher than α-tocopherol and BHA. Anthocyanin content reached 0.25 ± 0.02 mg / g gallic acid equivalent. The residues of jelly fig extracted by 70% ethanol, that is CP; the centrifugal precipitation of protein (PR), and then purified by Sephadex LH-20 column and HPLC , and follow up on freeze dry, PP. The recovery rate of PEI was 2.5%, higher than PP and PR, 0.75%, 1.3% respectively. U937 and K562 cell lines reacted with PEI in 24 hr, the inhibition rate is higher than 75%; the inhibition rate of PP higher than 92%. From the results of MTT analysis, it was found that the PEI and the PP also produced toxicity to U937 and K562 cells. It was found that the polyphenols lead to cell nucleus staining, DNA fragmentation and cell cycle Sub-G1 phase increase phenomenon. From the experiments, it was to surmise the PEI and PP on U937 and K562 cells is caused by the impact of its progress towards apoptosis. PEI, CP and PP could significantly inhibit the secretion of IL-2 from peripheral blood lymphocytes at the concentration of 100 μg/mL; CP and PP also can inhibit the secretion of IL-10 and γ-IFN. PP showed the strongest inhibitory effect on cytokines IL-2, IL-10 and γ-IFN. From the above results, it can be seen that polyphenols can inhibit the expression of cytokines IL-2, IL-10 and γ-IFN.
