Summary: | 碩士 === 銘傳大學 === 觀光事業學系碩士在職專班 === 105 === Green, Energy saving/Carbon reduction and Environmental protection are terms that are regarded as important topics around the world in recent years, as are promoted in World Earth Day or World Food Day. However, the trend could not prevent the flourishing development of Tourism and Hospitality industry. The prosperity of hotels and restaurants are promoted due to the increasing number of citizens traveling. The increasing travel population has also made a negative impression of buffet restaurants to the public as being luxurious, wasteful, and anti-environmental.
The views and opinions of management executives of buffet restaurants are evaluated in this study through quantitative and qualitative analysis. The importance and performance of hotel buffet restaurants and buffet restaurants in prosecuting green environmental management, and whether their application coincides with the assessment plans of those star-studded deluxe hotels. Quantitative analysis is using IPA Importance and Performance Analysis to design questions for questionnaires. Non-random selective sample intentionally selected New Taipei city, Taipei City, and Taoyuan regions. Questionnaires were distributed to owners of fifteen hotel buffet restaurants and fives buffet restaurants. Twenty professional questionnaires were distributed in total. Twenty effective questionnaires were collected. Qualitative analysis through interviews was performed with ten buffet restaurant owners, including owners of seven hotel buffet restaurants and three buffet restaurants.
The Quantitative analysis is as follows:
“Law-abiding star”, “Garbage-reduction star”, “Energy-saving star”, “Water-preservation star”, and “Purchase-safety star" these five categories and Seventeen indications were mostly evaluated as in first Quadrant (high importance and high performance), Owners are asked to “Keep up” the standard in the future,and has Fives indications were evaluated as being in the Second Quadrant,The supply of excessive consideration, In addition, there are Seventeen indications were evaluated as being in the third Quadrant. Is a "low priority" improvement projects.and has one indications were mostly evaluated as in fourth Quadrant,The focus of improvement is on projects that require urgent improvement,to provide relevant government units for reference.
The Qualitative analysis is as follows:
Many international tourist hotels have more resources, both software and hardware services, provided by overseas financial groups, and therefore, are more capable of practicing green, energy preservation/carbon reduction and environmental objectives.
On the other hand, local hotels and buffet restaurants would feel less competent even powerless when practicing green, energy preservation/carbon reduction and environmental objectives due to limited business size and resources compared with international tourist hotels.
Restaurant owners are hopefully expecting the governments could allocate more resources and supporting measures while executing any related evaluations in the future.
