Since March 2010, the Ministry of Education encouraged Primary and Secondary Schools in Taoyuan city to provide "Vegetable Food Day " in Nutrition Lunch and hoped students eat more vegetables and less meat ." The purpose of this policy is not onlt to improve the health of students, but also teach students to save energy to reduce carbon emissions of the Earth. By 2016, 182 primary schools have responded to this policy and the intention of schools to promote the policy are affected by the teacher's knowledge, and attitudes. The subjects of the study were teachers of the public elementary schools in Taoyuan. The purpose of this study was to discuss the relationships among teacher’s low-carbon vegetarian diet knowledge, attitudes and dietary behavior. Hope the results could be used for future research related to low-carbon vegetarian diet education. The study was conducted via a questionnaire survey. The subjects of the study were the teachers working in the public elementary schools that are followed the policy of Vegetable Food Day in Nutrition Lunch in 2016. The design of the questionnaire was based on the literature review and the content of the questionnaire included teacher’s low-carbon vegetarian diet knowledge, attitudes, and dietary behavior. The questionnaires were issued via stratified sampling. 160 questionnaires were issued, and 160 questionnaires were returned. There were 142 valid questionnaires and 18 invalid questionnaires. After the testing of the validity of the value of Cornbach’α, item–to-total, and construct validity, SEM method was applied for further analysis. The conclusion of the research are:(a)Teacher’s low-carbon vegetarian diet knowledge, and teacher’s low-carbon vegetarian diet attitudes have significantly positive correlation; (b)Teacher’s low-carbon vegetarian diet attitudes and dietary behavior have significantly positive correlation; (c)Teacher’s low-carbon vegetarian diet knowledge and dietary behavior have not significantly correlation.
