Therefore, based on the theory of photo-elicitation, this study used the Zaltman metaphor elicitation technique to explore the healing factors of Japanese cuisine, with a focus on the sensory experience. This study recruited eleven respondents who have high-pressure lifestyles and particularly love Japanese cuisine. The respondents were required to collect 10 to 12 pictures which represent the sense of healing they gain from Japanese cuisine. To deconstruct the metaphorical healing factors behind the Japanese cuisine, in-depth interviews as well as repertory grid and laddering techniques were used. The results found that the healing factors of Japanese cuisine may be categorized into five facets: the sensory experience: artistic aesthetics; Japanese cultural experience; a Zen ambiance; and healthy diet and nutrition.
