Summary: | 碩士 === 育達科技大學 === 資訊管理所 === 104 === According to the statistics from CommonWealth Megazine, the populations of vegetarians in Taiwan are about ten percent of populations, which was ranked as the second place in the world. To follow the prosperous trend of vegetarianism, many restaurant enterprises try to find new managing strategies and change their model of management and ingredients according to the main factors which lead to the trend of vegetarianism. The development of vegetarianism possiblly comes from religious obedience, health persuing or environmental protection or other various factors. Therefore, the research eagers to search for the factors of leading the vegetarian trend and the statistics about the possible factors. Under all possible considerations for resulting in the trend of vegetarianism, we try to analyze the most important factors for people in Taiwan to choose vegetarianism as a way for their daily eating habits.
To define the reasons to cause the trend of vegetarianism, this research collects both quality and quantity data from domestic and foreign essays and periodicals. Then we use the questionnaire of Modified Delphi Method to collect the opinions from experts to build the basic structure of analytical hierarchy. From the analytical hierarchy structure, we could learn the possbile factors for leading the trend of vegetarianism. And then we use Analytical Hierarchy Process to find out the relative statistics among factors and finally do the consistency test and arrangement.
According to the research consequences, the facotors of leading the trend of vegetarianism in Taiwan are religious factor, health factor, environmental protection factor, and mental factor. The results of this research could offer government administration, school lunch nutrition management, vegetarianism restaurant enterprises to use as reference resources for their policy advocacy or for people getting to know the new eating life style in Taiwan.
