Description
Summary:碩士 === 國立臺灣師範大學 === 物理學系 === 104 === We use a homemade device combining time-resolved light scattering and stress measurement to study the complex structural and mechanical behavior of concentrated emulsions under shear. Our device allows us to measure the structure and the rheology synchronously. The results of our experiments provide us a insight full information the complex structure-rheology relationship of the emulsions in a more detailed then rheometer manner. Shear thinning behavior at finite shear rates is observed. The light scattering result shows that the inter-droplet order is weakly induced at high and low shear rates while at medium shear rate the droplet order is strongly induced. The inter-droplet structure is coupled with the rheology behavior. Combining the structural (scattering) and the rheological (stress) responses, we discovered that within certain range of shear rate, better inter-droplet order corresponds to weaker stress response.
