They provide food, drinks, and local delicacies to fulfill tourists’ physiological needs. In addition, they serve as evening entertainment destinations for tourists to further understand local lifestyle and to bond and enhance relationships. In recent years, night markets become a well-known local culture of Taiwan to the world. This cultural development attracts investigators to study this unique “Night-market Culture” in Taiwan. After analyzing literature studying night markets in Taiwan, we realized that there are limit discussions (if any) about law and regulations of night markets. In this study, we made a thorough investigation regarding environmental quality improvement program of night market from legal perspectives and mobile vendors’ (food trucks) regulations and their influence on environmental quality. In this qualitative study, we started with literature reviews to identify the main environmental issues regarding night markets. Once the issue was identified, we conducted in-depth interviews with the leaders of the Night-Market Vender Unions, night market managers, and finally local politicians to regarding the related regulations on environmental quality, hardware regulations and benchmarked with the Food Trucks’ specification from other countries. After in-depth interviews, collect the results were transcribed, and the content was further analyzed and categorized, and certain conclusions were developed. Recommendations based on this study were made to help improve environmental quality, establish regulations, and the feasibility of introducing mobile vendors operating at the night markets.
