Being rich in a lot of polysaccharides and antioxidants, functional polysaccharide can activate macrophages and enhance the natural defense potential for human immune system, acting as anti-aging, eliminate free radicals, lower cholesterol, adjust blood pressure, skin moisture and other effects. In this study, water bath extraction and ultrasonic wave extraction for 1 to 8 hours at 40 to 100 ℃ are investigated, The research at different temperatures and time extracted polysaccharide content and extraction rate were studied. In the ethanol extraction method, by using different time and concentration, at 78 ℃ for 2 to 24 hours, We find the best extraction time to get extraction rate and total phenol, antioxidant content of flavonoids. The content of 48.925% with 26.52% polysaccharide by extracting stem of basella in hot water at 90 ℃ for 4 hours is the optimum conditions. The best condition of malabar spinach leaves in ethanol extraction method with 25.321% of water extraction was the highest rate to get total phenol 7.643% at constant temperature 78 ℃ for 6 hours. But 3.751% total flavonoid is lower antioxidant capacity index. According to stems of basella is extracted by ultrasonic oscillation in different condition of temperature, time and power. The highest content is 40.915%, 17.963% with polysaccharide content and the content of increasing with oscillation power rising. Due to the test result of antioxidant activity DPPH radical scavenging assay 36% of the total antioxidant, the ability of 71%, reducing power assay 47%, Ferrous ion chelating ability assay 53% inhibition of liposome peroxidation assay 16% are necessary. Therefore, antioxidant capacity of Polysaccharide being seen in the lowest, and the highest water antioxidant capacity are required. Key word: Basella, Polysaccharides, anti-oxidation
