Description
Summary:碩士 === 中山醫學大學 === 營養學研究所 === 104 === The purpose of this study was to investigate the effect of food pictures assist with nutrition education on nutrition knowledge, food attitudes, and eating behaviors in patients with chronic kidney disease (CKD). We recruited 50 subjects with CKD and collected basic information, biochemical values, diet records, and diet questionnaires before and after nutrition education. The results shows the values of body weight (P = 0.001) and body mass index(BMI, P = 0.002)were significantly decreased after nutrition education. With regard to nutrients intake of the subjects, patients with 3b phase (67.0 ± 18.3 decreased to 52.1 ± 9.9 g/day, P < 0.005) and IV phase (57.8 ± 17.1 decreased to 47.4 ± 6.9 g/day, P = 0.001) of chronic kidney disease had significantly lower protein intake after nutrition education. The scores of nutrition knowledge (5.5 ± 2.6 increased to 8.4 ± 1.6 points, P < 0.01), attitudes (22.2 ± 4.5 increased to 23.4 ± 3.5 points, P = 0.004), and behaviors were significantly increased (27.2 ± 4.8 increased to 31.4 ± 4.7 points, P < 0.01) after nutrition education. In addition, the scores of nutrition knowledge were significantly positive correlated with food attitude (r = 0.383, P = 0.006) and eating behaviors (r = 0.315, P = 0.026) after nutrition education. In conclusion, using food pictures assist with nutrition education can help CKD patients to increase their nutrition knowledge, food attitudes, and eating behaviors.
