Description
Summary:碩士 === 國立虎尾科技大學 === 生物科技研究所 === 103 === Honey is a sweet natural product produced by Apis mellifera from the nectar of plants (nectar, honey). Each honey possesses its own aroma and flavor, depending mainly on the botanical sources that contribute to its production. In this study, a simple diret APCI-MS analysis was applied to detect the fingerprinting mass spectra of the honey samlples after 10-fold dilution with water. The obtained mass spectra were found to be useful in the identification of the honey from different botanical and geographic origins. By using the characteristic ions/ion ratios, the mass spectra database (fingerprinting mapping) and PCA strategies, all the idetifications were valid. 30 blind samples were examined with the strategies, the successful ID rates were 29/30 using ion ratio, 28/30 using liberary search and 28/30 using PCA method. The results evidenced the ultilty of the direct APCI-MS analysis for the identification of the honey oringins.
