The researcher used the questionnaire method, involved 1,000 preschool educators in central area of Taiwan, and received 861 valid feedbacks; these were sampled by stratified cluster sampling. The data were analyzed using methods including descriptive statistic, independent t-test, one-way ANOVA, and multiple stepwise regression, etc. The conclusions of this study are as follows: 1. Generally, the scale of kindergarten’s current meals served, which contains ‘‘meals design and supply’’ and ‘‘food and health management’’ are above average, especially the ‘‘food and health management.’’ The level of ‘‘cognition of healthy diet’’ of the preschool educators is above average, they cognize the ‘‘healthy cooking methods’’ the most, which followed by the ‘‘food and nutrition’’ and the ‘‘daily food guide concept.’’ 2. For kindergarten’s background variables, feedback from ‘‘the scale of current meals served’’ would be significantly different due to variables such as ‘‘location of kindergartens,’’ ‘‘characteristics of kindergartens’’ and ‘‘the kindergarten’s daily meals fee.’’ But it shows no remarkable different due to ‘‘the major meals designer.’’ 3. For kindergarten and preschool educators’ background variables, feedback from ‘‘the scale of cognition of healthy diet ’’ would be different due to variables such as ‘‘location of kindergartens,’’ ‘‘characteristics of kindergartens,’’ ‘‘the kindergarten’s major meals designer,’’ ‘‘kindergarten’s daily meals fee,’’ ‘‘the job title of the preschool educators,’’ ‘‘whether does the preschool educators take the meals design and nutrition-related courses in their school life, ’’ ‘‘the age of preschool educators’’ and ‘‘educational status of preschool educators.’’ But it shows no remarkable different due to ‘‘how many hours does the preschool educators participated in the meals design and nutrition-related workshop, in nearly three years. ’’ 4. Variable such as ‘‘location of kindergarten,’’ ‘‘the major meals designer’’ and ‘‘the kindergarten’s daily meals fee,’’ its’ background variables would possess predicting effect toward the ‘‘‘the scale of current meals served.’’ 5. Variable such as ‘‘location of kindergarten,’’ ‘‘the major meals designer,’’ ‘‘the kindergarten’s daily meals fee,’’ ‘‘the job title of the preschool educators,’’ ‘‘whether does the preschool educators take the meals design and nutrition-related courses in their school life,’’ ‘‘the age of preschool educators’’ and ‘‘educational status of preschool educators,’’ its’ background variables would possess predicting effect toward the ‘‘‘the scale of cognition of healthy diet.’’ At last, according to the study, the result would be able to provide future reference to teacher’s training organizations, kindergarten, preschool educators, as well as to future researchers. 駱明潔 2015 學位論文 ; thesis 217 zh-TW
