The behavior of food craving is associated with non-compliance to long term goals on eating, what is more than feeding hungry. Food craving is influenced by food-cue, stress, and cognition, this behavior may lead to obesity and cardiovascular disease. The present study aimed to investigate the food preference response from food cravers using Electroencephalography (EEG) technique. A Food Craving Questionnaires (FCQ) was constructed, and then used to identify craver subjects. Effect of positive and negative cues on food response was accomplished using sensory evaluation and changes of brain wave activity. Results showed that significant difference was found between two groups in responding to the FCQ, including criteria of intention, demand/tendency state, relief from negative, lack of control, preoccupation, physiological state and emotion. The characteristics of food products also affected food craving scores and preference between two groups. Additionally, preference was found to be with respect to food characteristics. Alpha activities, responding to positive and negative photo cues, were significant higher (p < 0.05) in craver than control subjects. Moreover, high correlation (r = 0.61) between food preference score in sensory evaluation and alpha activity was determined in craver after positive cue. High extent of alpha activity in the EEG spectrum was also found in craver when exposed to negative cue, indicating that cravers’ food preference was not affected by previous negative cue. In addition, greater alpha activity in EEG spectrum was noticed in selected craver subjects as after positive and negative cues, showing that food craving questionnaire has a good reliability. According to the findings in this study, food preference of craver subjects was higher than control after food cues, and use of EEG and food cravings questionnaire on screening food craver may be beneficial to improve food behavior.
