The data from the project of Council of Agriculture were used to analyze the subjective and objective factors affect food consumptions structure. The same data were applied to compare with the data from previous surveys, to understand how the food consumption pattern changed over time. The main results of regression analysis are as follows. In the individual interviewee part, age significantly affects consumers consume two categories of dietary food consumptions (1) meat, fish, beans, and eggs and (2) grease, nuts and seeds. Gender significantly affect (1) grains and roots, (2) meat, fish, beans, and eggs and (3) grease, nuts and seeds. Consumers have graduate level of education consume differently from consumers have elementary level of education in the categories of (1) grains and roots, (2) vegetables, (3) fruits and (4) grease, nuts and seeds; consumers have college level of education consume differently from consumers have elementary level of education in the categories of (1) grains and roots and (2) vegetables. The higher level of income consumes the more of (1) grains and roots and (2) fruits. Interviewee live in southern Taiwan have less amount of (1) grains and roots and (2) grease, nuts and seeds than interviewee live in eastern Taiwan. In the household part, the age of the highest age of family will significantly affects consumption of family in two categories (1) grains and roots and (2) meat, fish, beans, and eggs. Workers work in the education organization; agriculture, forestry, fishing and animal husbandry; police and military and retired interviewee have significantly different consumption pattern with interviewee work in government in the following categories:(1) grains and roots, (2) meat, fish, beans, and eggs, (3) vegetables and (4) fruits. Interviewee of Hoklo and new inhabitants consume differently from interviewee of Hakka people in the categories of (1) vegetables, (2) grease, nuts and seeds or (3) fruits. The size of family affects consumption pattern of (1) meat, fish, beans, and eggs and (2) grease, nuts and seeds remarkably. Interviewee with 5 or more hours of exercise weekly consume differently with those exercise less than 1 hour weekly in the categories of (1) meat, fish, beans, and eggs and (2) vegetables. The last, interviewee live in northern and southern Taiwan have fewer amounts of (1) grains and roots and (2) vegetables, (3) fruits and (4) grease, nuts and seeds than interviewee live in eastern Taiwan. When consider the subjective factors affect categories of dietary food consumptions, (1) taste and (2) family opinion are the most important factors affect individual interviewee when they consume grains and roots. Reputation of producers affects the consumption of vegetables mostly. In the categories of grease, nuts and seeds, safety has the most important influence. When interviewee of household consumes fruits, production location affects the most. In this paper, we analyze the objective and subjective factors affect the structure of food consumption of Taiwanese, we wish to have contribution to policies makers when they establish policies of nutrition, health and agricultural production
