Auricularia was the first artificial mushroom cultivated in the world. Currently, Auricularia cultivated varieties of mainly A. polytricha in Taiwan. Mushroom is a functional food, it riches in dietary fiber and variety of minerals needed by the body. The purpose of this research is focused on the mineral elements content of commercial mushrooms, explore added calcium compounds for P. eryngii strains and A. polytricha mycelial growth situation and characteristics, and used calcium nitrate to increase the calcium content of P. eryngii and A. polytricha fruiting body. According to the study results showed that mineral elements content of ten commercial mushrooms. Pleurotus of Pleurotus citrinopileatus, Pleurotus ostreatus, and Pleurotus salmoneostramineus were the highest in the nutrient content of the majority. Compared different mushroom farm for P. eryngii. Rui-○ farm's cap and Jing-○ mushroom farm's stipe were the highest of calcium content. Comparison of different sources of calcium content of A. polytricha, were no significant differences, and had a good amount of calcium. P. eryngii P10 strain mycelium optimum growth temperature was 25℃-28℃, the optimum growth temperature was 28℃ on PDA medium. Added calcium carbonate and calcium sulfate for each 1% were the most appropriate on different PDA medium; and mixed in calcium nitrate concentration of 500 ppm-1000 ppm at the most suitable for different concentrations. P. eryngii P10 strains suitable for the growth of mycelium temperature was 22℃-28℃; it’s the optimum growth temperature was 25℃ in sawdust substrate tube. Added calcium carbonate 1% as the most suitable on PDA medium; mixed in calcium nitrate in a concentration of 0.5% to 1% for the most suitable for the different concentrations. Cultivated strains of P. eryngii P10 fruiting to added calcium nitrate concentration 0%-1.5% sawdust were suitable for sawdust substrate in the package; however, analysis of the calcium content of the fruiting body. Stipe would enhance calcium nitrate concentration increased and calcium nitrate concentration to 3% for the best. So that, added calcium nitrate concentration 0.5% can be cultivated out good yield, in a short time, mushrooms can be harvested twice and high calcium content. A. polytricha B4 strain mycelium optimum growth temperature was 25℃-31℃, the optimum growth temperature was 31℃ on PDA medium. Added calcium carbonate and calcium sulfate for each 1% were the most appropriate on different PDA medium; and mixed in calcium nitrate concentration of 2000 ppm-3000 ppm at the most suitable for different concentrations. A. polytricha B4 strains suitable for the growth of mycelium temperature was 28℃-31℃; it’s the optimum growth temperature was 28℃ in sawdust substrate tube. Added calcium carbonate and calcium sulfate for each 1% were the most appropriate in sawdust substrate tube. Added calcium carbonate 1% as the most suitable on PDA medium; not to mixed in calcium nitrate 0% as the most appropriate at different concentrations. Cultivated strains of A. polytricha B4 fruiting to added calcium nitrate concentration 0%-2% sawdust were suitable for sawdust substrate in the package; however, analysis of the calcium content of the fruiting body, would enhance calcium nitrate concentration increased, calcium nitrate concentration to 3% for the best. So that, adding calcium nitrate concentration 0.5% can be cultivated out good yield, in a short time, mushrooms can be harvested twice and high calcium content.
