Roem., Ipomoea batatas (purple leaf), Asplenium antiquum Makino, Lycium chinense Mill., Saccharum officinarum, Ipomoea batatas (green leaf), Potamogeton pectinatus, Basella alba, Hemerocallis fulva (green), Amaranthus mangostanus (green), Nymphoides cristata (Roxb.) O. Kuntze, Sechium edule (Jacq.) Swartz (yellow), Sechium edule (Jacq.) Swartz (dark green), Momordica charantia var. abbreviata Ser., Brassica campestris, Amaranthus mangostanus (red), Hemerocallis fulva (yellow), Sechium edule (Jacq.) Swartz (pale green), Sechium edule (Jacq.) Swartz (dry).
The antioxidant substances included polyphenol, flavonoids, flavonols and anthocyanidins. The individual of flavonols, such as quercetin, myricetin, morin, kaempferol were also determined. The antioxidant activity was evaluated by DPPH radicals scavenging, TEAC values and oxygen radical absorption capacity (ORAC) values.
In results, the polyphenol content was rich in Toona sinensis M. Roem.. The flavonoids, flavonols and anthocyanidins contents were rich in Perilla ocymoides var. crispa Benth. f. purpurea Makino. Toona sinensis M. Roem. had the best IC50 of DPPH radicals scavenging value and also had the best TEAC values. Perilla ocymoides var. crispa Benth. f. purpurea Makino had best ORAC values. The quercetin was rich in Lycium chinense Mill. and Perilla ocymoides var. crispa Benth. f. purpurea Makino, while myricetin was rich in Sechium edule (Jacq.) Swartz (pale green). The morin was rich in Artemisia lactiflora Wall. and Perilla ocymoides var. crispa Benth. f. purpurea Makino, while kaempferol was rich in Gynura bicolor DC. and Toona sinensis M. Roem..
In conclusion, Toona sinensis M. Roem. and Perilla ocymoides var. crispa Benth. f. purpurea Makino had rich antioxidant substances and had best antioxidant activity. The result can provide for the future to development of functional food products from the richest source of antioxidant substances in these indigenous vegetables.
