The study of the operational behavior in the night market shows that performed environmental public hazard issues perform mainly four types. (1) The smog pollution is made from the cooking business. (2) The noise issue is generated in the marketing. (3) The solid waste is manufactured in the consumption process. (4) The produce of the liquid waste is the cleaning and the cooking. This research shows that hawkers’ operating behaviors in the night market for self-management and controlling among the operational organization, site management, system, prevention of environmental pollution and other public hazard etc. in the night trading venues can help mitigate environmental problems occur and play an important administration role in the case of the government's manpower shortage.
Night market or night bazaars are important component of Taiwan's culture, especially the joyful and bustling ambience of night market and a wide variety of foods are interested the international tourists. The development history of Taiwan night market’s culture is very early; it began with the Ming and Qing dynasties’ market system, formed the initial state in the period of Japanese rule and thrived in the Recession of Taiwan.
The existence of market is depend on the support of the urban residents and the development direction of city plans if the operating organization wants to initiate a popular and successful night market, and the environmental pollution of the business is a serious barrier of the sustainable development for the flourishing impression and the successful operation of night market, this is an urgent problem to be solved.
This research applied the interview and case study technique for the individual peddler, the operating organization and the administrative organ of the night market to obtain how to respond the environment pollution problem and find the solutions, especially the operating garbage issues.
Finally, this study suggests that organizations should be set up adequate number of bins to storage the garbage of business in position and to achieve waste reduction goals with the organization of human deployment mechanisms to establish the issues of the efficient solution for the environmental protection. The research points out the management policy need to be designed by the government to let that the hawkers and their organizations share social responsibilities to devote themselves to the society, and the government should be coach them to establish the concept of business without sacrificing environmental protection. They make up their mind how to do, the results have the strong influence on the developments of the operating environment protection.
