The sampling population of this research is composed of forth to sixth grade vegetarian students in the elementary school of Tainan Senior High School in 2011. To research the final valid samples are 66 (forth-grade students: boys=12, girls=17; fifth-grade students: boys=14. girls=14; sixth-grade students: boys=3, girls=6). The tool to examine the result is based on the items listed in the Physical Fitness Passport The Republic of China, and the data was treated with t test and conclusions are as following: 1. After the body health measures with those who are vegetarian and non-vegetarian students in Tainan elementary school, the height of the vegetarian students are non-differentiation with the 50th percentile of the national BMI norm. Only the weight of the fifth-grade non-vegetarian boys achieve the reference standards. And to the part of weight, the weight of those vegetarian students is lighter. Among the fifth-grade vegetarian girls, they all achieve the reference standards, besides, the others are non-differentiation. 2. The result is further evaluated, the BMI of those students is criticized 「medium」, power, muscle strength, flexibility, and cardiovascular endurance are estimated 「Moderate」. The flexibility some of sixth-grade vegetarian boys and fifth-grade non-vegetarian is 「Need more efforts」. The cardiovascular endurance of the forth-grade non-vegetarian boys and girls is 「Need more efforts」. The muscle endurance of the sixth-grade non-vegetarian boys and girls is 「Excellent」. All of these data reveal the Health-related physical fitness is within the normal range. 3. The result is further comparison, the body mass index of the fifth-grade girls and sixth-grade boys is lower than the reference standards, besides, the others are normal. In power, the fifth-grade girls is better than the reference standards, besides, the others are normal. In muscle strength and cardiovascular endurance , the high-grade non-vegetarian students show better results in power and muscle fitness, but worse in flexibility, and cardiovascular endurance. As the results of the study, the height and weight of vegetarian students are non-differentiation with the national BMI norm, that is, it doesn’t have any negative influence to students’ growing development with three vegetarian meals or a vegetarian meal a day. Therefore, nowadays parents and teachers can feel relieved and popularize the vegetarian diet by following the one-day-one-week or one-day-one-month vegetarian diet policy.
