Summary: | 碩士 === 國立屏東科技大學 === 農園生產系所 === 101 === Brassica oleracea is a Cruciferous herb unique to native land and is widely planted in the central part of Taiwan. In addition to low calories, more fiber and rich vitamin C, its anti-cancer effect is highly commendable. In recent years, many studies have shown that Cruciferous vegetable seedlings have quite a good antioxidant activity and great nutritional value.
This study aims to explore the antioxidant activity on Cruciferous vegetable seedlings by conducting tests on different kinds, different lights and different light qualities. Tests are divided into three parts: (a) the antioxidant activity on Cruciferous vegetable seedlings under different growth days; (b) the antioxidant activity on different kinds of B. oleracea seedlings under different hours of light; (c) the antioxidant activity on Cruciferous vegetable seedling under different light qualities and hours of light.
It’s found from the test results of the antioxidant activity on Cruciferous vegetable seedlings under different kinds and different growth days that Cruciferous vegetable seedlings do not vary in total phenolic content, DPPH radical scavenging capacity, superoxide anion scavenging capacity and total reducing capacity due to different growth days. The chelate achieves the highest antioxidant activity on the 14th growth day. The vegetables with the flavonoids content from high to low are Green King Broccoli, B. campestris L., Wing Chui Broccoli and B. campestris L. var. amplexicaulis Makino; the anthocyanin content of Green King Broccoli and B. campestris L. var. amplexicaulis Makino is higher; the vitamin C content of Green King Broccoli and B. campestris L. is higher; ferrous ion chelating capacity, total reducing capacity and total antioxidant activity from high to low are Green King Broccoli, B. campestris L., B. campestris L. var. amplexicaulis Makino and Wing Chui Broccoli. In summary, Green King Broccoli and B. campestris L. obviously show higher antioxidant activity.
It’s found from the test results of the antioxidant activity on different kinds of B. oleracea seedlings (Green King Broccoli and Wing Chui Broccoli) under different hours of light that the total phenolic content of Green King Broccoli is significantly higher than that of Wing Chui Broccoli; both Green King Broccoli and Wing Chui Broccoli show the highest total phenolic content, vitamin C content, DPPH radical scavenging capacity, ferrous ion chelating capacity and total reducing capacity with 18 hours of light. The flavonoids content, the anthocyanin content, vitamin C content, DPPH radical scavenging capacity, ferrous ion chelating capacity, superoxide anion scavenging capacity, total reducing capacity and total antioxidant activity of Green King Broccoli and Wing Chui Broccoli under different hours of light have no significant differences. In summary, besides that the total phenolic content of Green King Broccoli is significantly higher than that of Wing Chui Broccoli, Green King Broccoli and Wing Chui Broccoli under different hours of light have no significant differences in antioxidant activity and show higher antioxidant activity with 18 hr of light.
The total phenolic content, the flavonoids content, vitamin C content, DPPH radical scavenging capacity, total reducing capacity, total antioxidant activity, Phenyl alanineammonialyase activity and myrosinase activity of Cruciferous vegetable seedlings under different hours of light have significant differences; the test value also shows higher with 18 hours of light, i.e. the antioxidant activity on Cruciferous vegetable seedlings becomes higher with longer hours of light. It’s found from the test results of the antioxidant activity on Cruciferous vegetable seedlings under different light qualities that Cruciferous vegetable seedlings growing up in white light have significantly higher flavonoid content; Cruciferous vegetable seedlings growing up in yellow light have significantly higher Phenyl alanineammonialyase activity and myrosinase activity. It’s found from the test results of the antioxidant activity on Cruciferous vegetable seedlings under different light qualities and hours of light that the total phenolic content of Green King Broccoli is significantly higher; the vitamin C content and DPPH radical scavenging capacity of B. campestris L. var. amplexicaulis Makino are significantly higher; ferrous ion chelating capacity, total reducing capacity and Phenyl alanineammonialyase activity of B. campestris L. are significantly higher.
In short, Green King Broccoli and B. campestris L. have higher antioxidant activity; Cruciferous vegetable seedlings with longer hours of light have higher antioxidant activity; different light qualities have different effects on the antioxidant activity on Cruciferous vegetable seedlings. Overall, the price of B. campestris L. is lower, but it has quite good antioxidant activity, worth recommending.
