According to the literature, rice bran contain various nutrients and antioxidants that could be effective in preventing cardiovascular disease. The purpose of this study is to investigate of rice bran on the cholesterol reduction effect, the hyperlipidemia hamsters animal model will be used with rice brans. In this study, the hamsters were fed basal diets plus 0.2% added cholesterol and rice bran (2.5%, 7.5% and12.5%, respectively) for 8 weeks. After 56 days, the serum cholesterol was higher in hamsters fed the high-cholesterol diet than the normal group but significantly decreased in rice bran group. Serum high-density lipoprotein cholesterol was lowered in the high-cholesterol diet group but it was significantly increased in hamsters compared with the rice bran group. The serum total cholesterol concentration was significantly lower in all the rice bran group (13.18%, 8.26% and 11.50%), compared to high-cholesterol diet group. The serum triglyceride concentration was significantly lower in all the rice bran group (37.68%, 9.21% and 24.8%), compared to high-cholesterol diet group. Aortic atherosclerosis formation was significantly reduced by rice bran diets compared to the high-cholesterol diets group.
