It has been used over centuries for wellness, circulation, nourishment, and has some bioactivities: antioxidant, antiproliferation, and anti-cancer. The main ingredient of 2, 3, 5, 4′- tetrahydroxystilbene-2-O-β-D- glucoside (THSG) has anti-inflammatory, anti-atherosclerosis, improve gastrointestinal tract (GI tract) function, prevent Alzheimer's functions. The purpose of this study is to explore the optimum of extraction methods for Polygonum multiflorum water extract (PMWE) by use of the response surface methodology (RSM). Analysis Polygonum multiflorum concentrations (5%, 10%, 15%), soaking time (0 minutes, 30 minutes, 60 minutes), boiling time (30 minutes, 120 minutes, 210 points) as variances, and THSG content as the response factor to find the optimum extraction method.
The results show that the optimum extraction conditions by response surface methodology and statistical analysis of the results Polygonum multiflorum 15%, soaking time 54 minutes, boiling time 210 minutes can get the highest THSG content. And then analyze the antioxidant capacity, sensory evaluation and storage of the PMWE. Referring to the antioxidant activity, the free radical scavenging effect of DPPH is 77.1%, relative reducing power is 111.6%, scavenging effect of ABTS cation is 160.4%, ferrous chelates activities is 95.2%. The sensory evaluation shows that the consumer preferences for each investigated items are all above 4 points (total score 7 points). During the period of storage, the drink product had no significant change in color (p <0.05) and without microbe growing. These results suggest that PMWE with great consumer acceptance and antioxidant capacity and ability to maintain stable quality during storage.The Polygonum multiflorum water extraction has a high potential to be a commercial product. They also think that the Polygonum multiflorum water extraction can develop into a health drinks.
