The efficient logistics is essential to quickly respond to visitors’ demand. Few researches discuss the logistics of food vending in night market. This study employs case study to explore the logistic model of food vending in night market. There are three research questions in the research: (1) What is the logistics process of food vending? (2) What is the reverse logistics process of food vending? (3) How does food vending operate collaboration? We first interview three food vending to establish research construction and interview problems. To complete the investigation the research, we then select eight food vending and interview them. We choose the food vending according to purposive sampling and snowball sampling. The results of the study show that food vendors use central kitchen dealing with the materials, and taking supplier early involvement, and postponement strategies to overcome the limitations of operation. Food vendors take decentralized purchasing strategy on purchasing vegetables and fruits under consideration to avoid out of stock and control costs as well as use centralized purchasing strategy on purchasing fresh meat based on control quality. Most food vending makes replacement once a day. And, chain store of drinking collaborate with other store to save cost and time. Furthermore, food vending complete reverse logistics through outsourcing and horizon collaboration. Also, night marker council stands for a leader and manager role. Finally, the findings can guide the manager to enhance make the operation and management in night markets. Food vending could use postponement and early involvement strategies to improve efficiency. Besides, food vending should rent warehouse nearby selling place. Last, horizon collaboration and outsourcing could enhance reverse logistics operation and fit the law.
