This resulting in consumer demand and lifestyles are constantly changing. If the in-depth understanding of the relevant factors affecting consumer behavior, consumers will be able to help reduce the worries and uncertainty when buying food. In this study, we used food labeling and food additives knowledge as variables to discuss the effect on consumer attitudes and purchase intentions. The recovered 479 valid questionnaires were analyzed and the results showed that: (1) Food label information and food additives knowledge will influence attitudes and behavior. (2) Food label information can add 34% to explain the variation of attitudes and add 4.5% to explain the variation of behavior. (3) Consumers with more food additives knowledge will have a more positive attitude and behavior. Consumers with more attention on food labeling information will also have a more positive attitude and behavior. We therefore recommend educational institutions can enhance the knowledge of food labeling information and food additives to enhance students' cognitive on food labeling information and food additives. This can make students have more positive attitude and behavior toward their foods. We also recommend food-related industry to marked sufficient food label information on the packaging of food. This will effectively increase the chances of consumer willingness to buy. Finally, we hope the government can make strengthen norms and industries can also improve self-management to achieve the consumers’ common goal of food security.
