It hydrolyses starch and is used commercially for the production of sugar syrups from starch which consist of glucose, maltose, and higher oligosaccharides. The present work represents an investigation on the amylase production by SSF with agro-industrial materials as substrates and the determination of optimized medium compositions. Isoflavones are phytoestrogens. In recent years, the human physiology has many effects from isoflavones. Isoflavones act as antioxidants and against osteoporosis, cancer, cardiovasculardisease, and reduce menopausal symptoms. In this study, the conversion of genistein to 8-Hydroxygenistein using biotransformatiom was investigated. The effects on medium compositions were discussed.
