Summary:碩士 === 臺北市立教育大學 === 自然科學系教學碩士班 === 100 === The purposes of the study were: (1) To explore the cognition of food preservation of sixth graders; (2) To explore the differences of cognition in food preservation between males and females in 6th grade; (3) To explore food preservation cognition among 6th grades at large-sized schools, medium-sized schools, small-sized school in Beitou District, Taipei. The researcher conducted in questionnaire method for quantitative research. Two parts of the food preservation cognition and attitudes toward were included. First, collecting childrens’ concept of food preservation literature on analysis. And as the sources of questionnaire survey oven food preservation the cognition and attitudes toward of documents and interviews. Following the purposive sampling method, samples are from sixteen Public Elementary Schools in Beitou District, Taipei. Each school sampling tests half the number of classes in sixth grade. 1192 effective samples in cognition of food preservation and 1159 attitudes toward of food preservation from total 1206. Data was collected through questionnaires and analyzed statistically, for example percentage statistics, one-way ANOVA and two-way ANOVA were used. The outcomes of the study were as follows: (1) Sixth graders as the main considerations for the choice of food safety; (2) Sixth graders on food preservation was the underlying cognitive and attitudes toward on food preservation for positive; (3) There are significant differences between males and females in perception of food preservation (p= .000) but the attitudes toward were no significant difference (p= .645); (4) Beitou District large-sized schools, medium-sized school, small-sized school children have no significant difference on cognition (p= .070) and attitudes toward (p= .295) of food preservation; (5) Beitou District Elementary School sixth graders have learned in the science textbook "food preservation" unit and the children never learn in the cognitive (p = .000) and attitude (p = .001) on all significant differences; (6) Beitou District have a habit of reading in sixth graders of the school and no reading habits in food preservation recognition (p= .002) knowledge and attitudes (p= .000), there are significant differences. From the outcomes of this study, Proposed in the textbook to enhance students' food preservation cognition and continue to promote reading education. Allow students to do the right choice in the face of food safety issues.
