With the development of the Chinese market, annual export volume of the soft shell turtle eggs also rise. The prices were therefore increased. However, with the increasing breeding area, leading to the oversupply of soft shell turtle eggs, the price has fell nowadays. Soft shell turtle eggs containing rich amount of unsaturated fatty acids, amino acids and minerals. Studies indicated that soft shell turtle eggs can help to clear the blood cholesterol, keep blood vessels unimpeded. In this study, the compositional and functional analysis has been performed in order to identify the added value of the fertilized soft shell turtle eggs as the health food and nutritional supplements. In this study, chemical methods were used to test the antioxidant capacity of the soft shell turtle egg extracts. It was found that the DPPH scavenge ability of the water extracts were better than the alcohol extracts. The alcohol extracts, however, provided better ABTS free radical scavenging ability than the water extracts. As for the ferrous ion chelating ability, the water extracts were significantly higher than the alcohol extracts. In addition, extracts obtained from supercritical carbon dioxide extractions were used to test their healing effects on oxidative damage to mouse macrophage cell line RAW264.7. The results showed that the extracts obtained from the extraction conditions of 55℃ 300bar and 55℃ 350bar can effectively improve the survival rate of the oxidative damaged macrophage up to 3.7 times of the control group. The aforementioned extracts may also improve the growth rate of the undamaged macrophage 2.3 times higher than the control group. The results of gas chromatographic analysis reveal that the fertilized soft shell turtle eggs contain variety of polyunsaturated fatty acids, including EPA and DHA and other ingredients.
