Auricularia polytricha is one of the universal food materials, it contains the rich polysaccharide body. It possesses many biological activities, such as antioxidant, anti-hemoglutination and anti-high blood sugar level. Vitamin E is a kind of nutrition for health, it has antioxidant effect, may slow down the LDL oxidation, and may reduce macrophage content in the injured vascular itima and inhibit cytokine-induced cell response. The purpose of this study was designed a high-fat and high-cholesterol diet contained a combination of Auricularia polytricha with vitamin E to investigate if they can be as prevention of atherosclerosis progress in rabbits for the synergistic effect. During the experiment, we recorded the body weight, and measured the LDL-C, HDL-C, triglyceride, cholesterol in rabbit serum to compare the different between each of groups. The results indicated that the high-fat diet groups had significantly different with control group, it demonstrated that this animal model of high serum lipid was induced successfully, and the serum lipid level decreased when used Auricularia polytricha or vitamin E alone. But when two materials were used together, the lipid level was not significant decrease in serum compared to use Auricularia polytricha or vitamin E alone. The ascending aorta was collected to study for atherosclerosis lesion by light microscopy and SEM. The results showed the Auricularia polytricha combined with vitamin E administrated in rabbits didn’t have synergistic effect in prevention of atherosclerosis progress.
